The plug or dummy shaft can be easily made if you have access to a lathe and mill. If you buy a broach, you need a press to push the broach through also. I cannot be driven with a hammer or the cutter will break.

The cylinder with bleed down control is the only real solution. You can build one and make the necessary mounts, even an air cylinders could be used.
The price of this downfeed cylinder has doubled since I bought one. If the saw I bought a couple years back wasn't equipped with one I would build one.
Ohh yea true. Good point! I didn't consider the change in angle would affect the weights downforce. Definitely wouldn't be good.

I'm pretty tight on money at the moment. Trying to build a new workshop, get important machinery, work van, etc. That hydraulic setup does look like a huge improvement, I'll have to stick with my spring setup for now.

I like the bandsaw but in the future I'll need a plasma or waterjet CNC or some kind of EDM setup. I don't like how long it takes to make manual cuts. It is a great tool though especially when you just let it run on its own.

The spring on the 4x6 is a cheap ass attempt to counter the effect of angle change, as the blade approaches the bottom the spring tension increases, but it really doesn't make the grade.

If I was making this grinder thing, I would use a 1" rotabroach to cut the tooth gullet, you would have a more aggressive tooth and greater clearance for the product. Or, if using AR plate or T1(you do not want to drill these steels unless you have the right tools and setup) cut them to this type of pattern on CNC.
I am also concerned with your gear reduction. You need some centrifugal force to clear out the tooth gullet, or the meat will impact there and stay, limiting your next tooth's appetite.
I would drive this at 1750 rpm and 2 hp should be able to handle bones and would keep itself clean in the tooth gullet.

I have mentally played with the idea of using a mandrel with angled washers to create a dado blade system, and mount 4-6 saw blades with a dado setting so the blades had a 3/4" kerf on a heavy mandrel with enough threaded nuts etc to clamp the blades. This was to grind apples for juice, but then they invented the garburator, and it grinds up apples and any other shit you throw into it. Neighbors mount one over a tub and feed the crop into it.
