You might try and fit a nipple into the piece before welding it. This may help to stabilize the tube fitting.

Whatever you do, DO NOT! fit a nipple into the coupling and then weld it.

I have found that a good base for a grinder is an old brake drum from a large truck. Weld a plate to each end of a tube; one plate to mount the grinder to, and the other plate to bolt to the brake...
